I must admit that taking a picture of my bread posing it w/ some lovely lavender my best friend Tatyana grew in her yard and gave to me does leave me feeling a little dorky. However, in the bigger scheme of things, I have to admit it looks pretty. So here I continue on my adventure to make each and every recipe in this NEW wonderful cook book, the Power of Flour. Today I decided to use those browning banana's in place of rhubarb in Roadside Rhubarb Bread.
In the picture I have salt, brown sugar, oil, an egg, applesauce, bananas, baking soda, whole wheat flour, yogurt and Trictale flour. I however didn't use the oil, and left out the vanilla (in the picture not the recipe)... I decided to use the applesauce in place of the oil bcs well I just wanted to!
So in goes the brown sugar, and apple sauce. Today I had my lovely little assistant Tia who you saw making the silly face in the ingredient photo.
My Tia loves to help me do the action shots and dump the ingredients in!
Here's the yogurt and the dark spot is the vanilla...
Stir it all up until its smooth... Than add the dry ingredients.
Loving the action shots? I know I am... Tia is such a great helper, she knows how to wait until I say okay... now!
In goes the whole wheat flour... The recipe called for Spelt or whole wheat I have yet to purchase any spelt (its on my list) so whole wheat it was. It also called for another flour I don't have yet so I just made adjustments with the Trictale and the whole wheat.
Than it called for nuts and rhubarb, which I didn't have any rhubarb (but would love to try it with this summer)... and I decided to save the little bit of nuts I do have for another day.
So in when the banana's... Today I felt like just dicing them up.. I didn't feel the need to mash thought it might be fun to do something different and have some chunks of banana's in this bread...
Notice my bowl? I collect these to use of course.. My wonderful mom finds them for me at estate sales for really great prices. Every time I look at them in antique shops they are just too expensive!! But they are amazing bowls!
Here's the batter split into two loaf pans... see the one in front? Its one of my new favorite loaf pans... I bought it at the St Vincent De-paul store here in Prineville (love that store) its just old and neat... and does a great job!
And lastly but not least... a nice slice all buttered up with butter from yesterday... so fantastic, tastes so good! Tia ate about five pieces this morning and I'm not even exaggerating!!! I would love to post the exact recipe from the book, but really I just want you to go get the book! Its amazing!!! So here's the link again...
And as much as I would love to see you buy it direct from the publishing company (the one I use to work for..) its cheaper through amazon, and they just buy from the publishing company anyways. So save a few bucks!
One more note... the book is spiral bound, so when you have it open to a recipe, it doesn't close on you!!!!
